Baked Chicken Fajitas!

This in one of my favorite recipes. It is so easy to make! A healthier alternative to frying in oil and using fresh veggies will make this one of your favorites too! I changed up the recipe a bit from the original, so feel free to add or subtract foods. Make it your own healthy meal!


Ingredients:
  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 2 Tbsp vegetable oil
  • 1 packet of fajita seasoning
  • 1 (15 oz) can diced tomatoes with green chilies
  • 1 medium onion, sliced
  • 1 large bell pepper, seeded and sliced (I use half a green and half a red)
  • 1 container of fresh mushrooms
  • 12 flour tortillas
  • Toppings such as cheese, sour cream, and guacamole – if desired
Putting it all together:
  1. Preheat the oven to 400 degrees. Place chicken strips in a greased 13×9 baking dish.
  2. In a small bowl combine the oil and fajita seasoning
  3. Pour mixture over the chicken and stir. Make sure the chicken is covered.
  4. Add the tomatoes, peppers, mushrooms and onions to the dish and toss ingredients again until covered.
  5. Bake uncovered for 25-30 minutes or until chicken is cooked through and the vegetables are completely cooked.

Best Chocolate Cake!

Ingredients:
 
1. Box of devil's food cake mix
2. 1 cup of non-fat plain Greek yogurt
3. 1 cup of water
 
Putting it all together:
 
Mix ingredients together and follow the directions on the cake box.
 
Frosting:
 
1. container of Cool Whip (fat free)
2. 3 tablespoons of natural peanut butter
 
Putting it all together:
 
1. Melt peanut butter in microwave for 15 seconds
2. Mix PB and Cool Whip together until blended.
3. Set in the fridge until the cake is cool.
4. Spread on top of cake
 
Annnnnd Enjoy! That is seriously it. I will never make a cake any other way. I get so many compliments on how moist and delicious this cake is. You can make any kind that you like and do the frosting in so many ways. W/o the eggs and oil it is a no guilt cake.

Mini Lasagna!

 
Best recipe for lasagna. Quick, easy and you can make it any way you like!
 

What you need:

 
Muffin pan
 
marinara sauce, ricotta cheese, mozzarella cheese, Parmesan cheese, won ton wraps, Italian seasoning 
Optional:  ground beef/sausage if desired
                  Peppers, mushrooms and onions
 
 
Putting it all together:
 
Spray the cupcake pan with non-stick spray and place one won ton wrap in each cup.  Next layer sauce, cheeses and any other topping you choose... then repeat.  Sprinkle with Italian seasonings and a little more mozzarella  on top! bake at 375 degrees for 18-20 minutes.  Let cool and pop out with a knife or fork.

EASY Angel Food Cupcakes

 
1 can of sugar free cherry pie filling (or any pie filling)
1 box of angel food cake
 
Putting it all together:
 
Mix pie filling and cake mix together. Pour into paper covered muffin tin. Bake at 350 degrees until toasty brown.
 
** I would eyeball these while baking... about 10-15 minutes. They are best when they are golden brown on top.
 
Great snack to take for a potluck at work!!

Salsa Chicken!

 
1 jar of salsa
3 Frozen (skinless) Chicken breasts
1 packet of low sodium taco seasoning
 
Throw it all in the slow cooker for 6-8 hours and shred the chicken with a fork.
 
Amazing taste and you can add it to anything from eggs to tortillas. An easy low-calorie meal for the week.

Pasta and Fresh Veggies!


Whole wheat pasta of your choice
1 head of broccoli
container of fresh mushrooms
bunch of green onions
red bell pepper
minced garlic
3 tbsp. olive oil
1 can diced tomatoes
1 container feta cheese

Cook the pasta according to directions

On Stovetop:

Cook veggies and garlic in the olive oil until slightly tender.
Add can of diced tomatoes and cook until veggies are completely tender

Big bowl:

Add pasta, feta and veggie tomato mixture together and toss until completely mixed.

AND... You're done! Super easy meal on it's own or add some protein of your choice.
